POPCORN--MOISTURE
The ideal percent moisture for popcorn is between
thirteen and fourteen (13 and 14) percent. Field dried popcorn usually
approaches this ideal percent.
Occasionally, stored popcorn will fail to pop due
to a drop in moisture content. Add one (1) tablespoon water to a quart
of popcorn, cover and shake several times. Allow the container to sit
for several days to absorb the moisture. This method usually raises the
percent moisture by 2 points.
Store shelled popcorn in glass canning jars with tight
fitting lids. If stored in a freezer or refrigerator, moisture content
should not drop.
